A Grain Older Than Civilization

Before there were cities, before there was writing, before the wheel was invented — there was einkorn. This tiny, single-kerneled grain was first cultivated in the Fertile Crescent more than 12,000 years ago, in the region we now know as Turkey, Syria, and Iraq. It was one of the very first crops that allowed humans to stop wandering and start building — the grain that helped give rise to civilization itself.

The name comes from the German word meaning “single grain” — a reference to the way each stalk produces just one kernel per spikelet, unlike modern wheat which has been bred to produce as many grains per stalk as possible. Einkorn spread from the Fertile Crescent through the Mediterranean and into Europe, feeding early farmers across the continent for thousands of years.

In 1991, the frozen remains of Ötzi the Iceman were discovered in the Italian Alps — a man who lived over 5,000 years ago. When scientists examined his last meal, they found einkorn wheat. This was the bread of our ancestors in the most literal sense.

Why the World Forgot Einkorn

If einkorn is so remarkable, why did we stop eating it? The answer has nothing to do with nutrition or flavor — and everything to do with yield.

As farming evolved, farmers naturally favored crops that produced more food per acre. Einkorn was eventually replaced by emmer, then spelt, and finally the modern bread wheat we know today — a heavily hybridized grain with 42 chromosomes compared to einkorn’s original 14. Each hybridization made the grain easier to grow in large quantities and easier to mill, but it also changed the gluten structure, the nutritional profile, and how our bodies respond to it.

By the 20th century, einkorn had all but vanished from mainstream agriculture. It survived only in small pockets — mountain farms in Italy, remote villages in Turkey, a handful of heritage seed banks. The world moved on to industrial wheat. But the wheat didn’t get better. It got cheaper, faster, and emptier.

Now, as more people experience discomfort with modern wheat and begin asking questions about what changed, einkorn is making a quiet comeback. Not as a trend — but as a return to what wheat was always supposed to be.

Einkorn is a hulled wheat, meaning each grain is wrapped in a tough protective husk that stays intact during harvest. This hull protects the grain from pesticides and environmental contaminants but requires an extra milling step to remove — one of the reasons einkorn costs more than modern flour and one of the reasons it’s worth every penny.

The flour itself is visibly different. Where modern wheat flour is white, einkorn flour is naturally golden — the color comes from its high concentration of carotenoids, the same antioxidants that give carrots and sweet potatoes their color. Modern bread wheat contains three genomes — A, B, and D. The D genome is the one most strongly associated with gluten intolerance and digestive discomfort. It’s also the genome that the most common celiac disease test is designed to detect. Einkorn contains only the A genome. Its gluten is structurally simpler, weaker, and more soluble — which means the body can break it down more easily.

Many people who experience bloating, discomfort, or inflammation after eating conventional bread find that they can enjoy einkorn without the same reaction.
